From Cooking Through The Seasons
Ingredients
375g grated zucchini (don't squeeze out liquid) about 2 cups
1 chopped onion
1 cup self-raising flour
1/8 cup vegetable oil
1 cup grated cheese
4 lightly beaten eggs
Method
Mix all together and place in greased tin
Bake in moderate oven for 30 - 40 minutes
You can also add some chopped bacon, grated carrot or other vegetables and herbs
